Happy Easter

Carrot cupcakes, cream cheese frosting, toasted coconut and malt balls.

Modifications for cupcakes:

*Bake for approx. 20 minutes at 350 degrees.

*Toast sweetened coconut on a sheet pan at 350 degrees, watching closely and turning over with spatula every few minutes to ensure even browning.

*Frost cupcakes and dip into coconut (or sprinkle on top).

*Add a few candy 'eggs'.

And they are ready to serve.
